SPAGHETTI ALL' AMATRICIANA.

ALL' AMATRICIANA.





*Recipe* For 4 person*

 *500g spaghetti
*125g guanciale
*1 tablespoon olive oil(EVO)
*1 tablespoon dry white  wine
*400g peeled plum tomatoes
*1-2 small red dry pepper
*150g pecorino cheese of Amatrice
*salt.

*OPTIONAL* 1 clove of garlic, 1 medium onion.*


*Direction*

* Cook spaghetti in a salted boiling water.

*Add the oil in a sauce pan, and place over the heat. Add the peeper, ( If you are using onion and garlic. chop the onion and clean the garlic. Add them to the oil. Cook them for 2-3 minutes.

*While they are cooking; chop the guanciale in cubes.
*Add the chopped guanciale to the oil.

* Let them cook until is cooked which is going to take about 2-3 minutes in a medium heat.

*When is fully cooked. Add the wine;


 * Allow the wine to evaporate, then remove the cooked guanciale from the oil.

*
*Leaving the pepper inside the oil.

*Add the tomatoes to the oil.
*Stir and add salt.

* After the sauce is fully cooked. Add the cooked guanciale back to the sauce.
* Stir and remove the pepper.
* Cook them for another 2 minutes.


*After 2 minutes add the cooked spaghetti to the sauce.
* Mix and add the cheese.
* Mix them together until they are well mixed.

* SERVE HOT.*
