PARMIGIANA DI MELANZANE.


*Recipe for 4 person.*

*3 eggplant (600g)
*2 tablespoon flour
*200g mozzarella
*300g plum tomatoes or tomatoes sauce
*6 leaves of basil
*1/4 onion chopped
*70g parmigiano grand
*40g olive oil
*vegetable or olive oil for frying
*pepper
*salt.


*Direction*


*Wash and dry the water out of eggplant.

*Cut in round shape.

*Add them on a sieve. Add salt to it.
*Mix and cover them. Place a little heavy object on top of it.
*
*Lol i used this dont laugh too much. Use anything that can help press the water out of the eggplant.

*Let it seat for an hour.

* While the eggplants are seating.

* Place a sauce pan over the heat. Add the oil and allow to heat.

* Add the chopped onion and cook for 5 minutes.
* Add the tomatoes, salt, pepper and basil to the cooked onion. Allow them to cook over a medium heat for 10 minutes. *Done.*

*Remove the object placed on it. Wash the eggplant with a clean water.
* Dry them with a towel or kitchen pepar.

* Place a non stick pan on the heat; add the oil. Allow the oil to heat very well.

* While the oil is placed on the heat. Flour the eggplant.
* Fry them over high heat.

* Add 1 tablespoon of olive oil in a casserole.

*Divide the fried eggplant into 2. Add one part on the casserole.

*Add tomatoes sauce, parmigiano, slice mozzarella,  and a little salt.



Repeat the layer.




*Bake at 180dgr for 45-50 minutes.
