SPINACH LASAGNA| ITALIAN CLASSIC SPINACH LASAGNA



Vegetables are rich in vitamins and minerals, packs so much pleasure to / for  children.

*Recipe*

*For 4 Person*

*Preparation: 45 min.

*Cooking:30 min.



Ingredients

* 2 onion
*1 or 2 garlic
*2 carrot
*1 tablespoon olive oi.(EVO) or more
*400g fresh tomatoes or plume tomatoes
*salt
*pepper
*pinch of oregano
*12-14 sheets of lasagna
* 350-400g of chopped spinach
*40g of parmigiano.



    FOR BESCIAMELLA

*30g of butter
*2 tablespoon of flour
*40cl of fresh milk
*100g parmigiano
*salt
*pepper
* pinch of nut meg.



*PREPARATION*
(1)

* Clean and chop the onion and garlic and set aside.

* Clean the carrot and chop in cubes. 

*Boil the fresh tomatoes for 5 minutes, remove from the heat and allow them to cool down a bit. Then peel off the back and blend with a food processor. . But if you don't want to go through this process, you can use plume tomatoes instead.

*Place a sauce pan over the heat. Add 1 tablespoon of olive oil, allow the oil to heat then add the onion and garlic and allow to cook for 3 minutes. Add the tomatoes, salt, pepper and oregano. Stir and allow them to cook for another 3 minutes then add the cleaned cubed carrot. Cook them for 2 minutes and turn off the heat.

* Mix the sauce together with the chopped spinach.( Not over the heat.)

*Prepare the besciamella.

*Place a sauce pan over the heat. Add the butter and allow to melt. Then add the flour, allow them to cook for 3 minutes with continues stirring.

*Add the milk, salt and pepper, stir  and lower the heat. Stir them continually for 5 minutes or until they come to light creamy texture. Off the heat and add the parmigiano. Mix until they are well combine.( set them aside)

* Boil a water.
*Transfer the boiled water into a large bowl, add the olive oil to the hot water to avoid the lasagna from sticking together. Add the lasagna and allow  to seat on the hot water for 2 minutes then remove them from the water.

* On a casserole; add a bit of olive oil and a tablespoon of besciamella, follow by the lasagna and the mix spinach sauce then parmigiano. Continue the layer until the lasagna and the sauce are all on the casserole. You can choose to add the spinach last or parmigiano they will come out the same.

* Pre heat your oven at 180dg
*Bake the lasagna for 30 minutes. Remove from the oven.

*Serve hot or cold.
