WHEN YOU COME TO ITALY FOR HOLIDAY,  LOOK FOR RESTAURANT CALL ( AGRITURISMO).  THE GOOD THING ABOUT IT, IS THAT YOU CAN FIND THIS KIND OF RESTAURANT IN ALL THE PART OF ITALY.

THEY ARE USUALLY OUT OF THE CITY BUT, IS A VERY GOOD PLACE TO EAT FRESH ITALIAN FOOD.

MOST OF THEM ARE IN THE MOUNTAIN OR CLOSE TO THE MOUNTAIN.

FRY ARTICHOKES.// CARCIOFI FRITTE.



*Fresh artichokes 500g
*3 eggs
*1 cup of flour
*vegetable oil
*salt.



* Cut the lemon . Add fresh water in a bowl.

* Clean the artichokes. Add them to the lemon water to prevent them from becoming black.



*Just like in the photo.




*With this process you can prepare the artichokes 1 or 2 hours before the frying time.


* When you are ready to fry them.

* whisk the eggs with a little salt.

*Remove the artichokes from the water.

* Add the artichokes to the flour.


*Just like this. You can use a plastice bag to do this or any other way of your choice.

* Mix them on the flour .

* Remove from the flour and egg wash it.



* Then fry on a hot hot.

BAKED CHICKEN POTATOES.

BAKED CHICKEN POTATOES.



*Recipe for 6-8 Person.*

*10 Chicken ties
*3 tablespoon olive oil
*salt
*pepper
*1 and half lemon
*1 tablespoon fresh thyme or dry thyme
*1\4 cup white wine
*5-6 cloves of garlic
*1 tablespoon of rosemary
*500g potatoes.


*Direction*

*Cut the lemon and extract the juice. After extracting the juice! Cut the lemon into 6 pis and set aside.


*Marinate the chicken with the lemon juice, rosemary,thyme, wine, salt and pepper, Add the cut lemon.  Cover with  clean wrap film.(plastic wrap).

*Let them marinate over night. Or you can marinate them 30 minutes before the cooking time.
Or 10 minutes before. But its best when you marinate over night.


*Wash the potatoes and cut in cubes. Do not peel the potatoes.



*Season the potatoes with 2 tablespoon of olive oil salt and pepper.


*Add 1 tablespoon of olive oil to a casserole, add the seasoned potatoes, and the marinated chicken. Add the unpeeled  garlic. ( dont peel the garlic).

*Just like this


*Add another half spoon of un chopped rosemary.


*Bake on a pre heated oven for 2 hours at 190dg . Or until the chicken is cooked.

SERVE HOT OR WORM,

PATATA, OLIVE AL FORNO ALLA PUGLIESE. BAKED POTATOES AND OLIVE.

*Recipe For 4 person*

*1kg potatoes
*3 tablespoon olive oil
*1 teaspoon salt
*50g parmigiano 
*1 onion
*50g tomatoes 
*100-150 seedless or seed green olive.
*1 teaspoon rosemary. 


*Direction*


*Peel the potatoes, Wash with a clean cold water.

*Slice the them in a tiny round shape.

*Chop the onion.

*Add 1 tablespoon of olive oil and the chopped onion  in a casserole,

* Add 2 tablespoon of olive oil, salt, rosemary to the sliced  potatoes and  mix well.

*Arrange  the seasoned potatoes on the casserole, with oil and onion.

*Add the  olive, tomatoes and  parmigiano on top of the potatoes. ( or vegetarian cheese) if you are Vegan. Or you can skip the cheese.

*Bake in 180dg for 1 hour 30 minutes. Or until the potatoes are well cooked.


   SERVE HOT OR WORM.

TUNA PASTA.

TUNA PASTA.





*Recipe* 4 Portion*

*180g can tuna
*400g pasta penne
*3 tablespoon olive oil
*400g plum tomatoes
*salt
*1 teaspoon dry basil
*Half onion .


*Direction*

*Place a water on the heat for pasta. When the water boils add salt and pasta stir and cover to cook.


*FOR THE SAUCE*

* Clean and chop the onion. Add the oil on a saucepan; Place it over the heat, add the chopped onion. Cook the onion for 2 minutes.

*Add the tomatoes and salt. Let the tomatoes to cook for 3-4 minutes.
Add the tuna and dry basil.

*Cook for another 4-5 minutes.

*Then mix together with the cooked pasta.
SERVE HOT.

SPAGHETTI ALLA PUTTANESCA.

SPAGEHTTI ALLA PUTTANESCA. ITALIAN RECIPE.





*Recipe* For 4 Portion.*

*360g spaghetti
*500g fresh tomatoes
*100g black olive
*25g capri
*2 cloves of garlic or 1 big clove
*5 salted anchovy fillets
*pinch of salt
*1 tablespoon of parsley
*Half teaspoon fresh or dry red pepper
*4 tablespoon olive oil.


*Direction*

* First step*
 *Place a water over the heat for spaghetti. When the water boils, add salt and spaghetti. Cove to cook.


*Meanwhile, cut the fresh tomatoes, olive, and parsley, and set aside. Clean the garlic.



*In a large saucepan add the oil, the fillet, parsley and pepper.  Let them cook until the fillet is well melted; with continuous stirring.


*Then add the cleaned garlic and olive  cook for 1 minute, add the fresh tomatoes and salt, Stir and cook for 2 -3 minutes or until the tomatoes is cooked.

*When the tomatoes is cooked mix the sauce together with the cooked spaghetti and serve hot.

THIS IS ONLY GOING TO TAKE 10-15 IN TOTAL.

APPETISER IDEA.



You can also add omelet with spinach and puff pastry.

RECIPE.
*100 spinach
*4 eggs
*Salt
*Black pepper
*1 roll of puff pastry
50g parmigiano
*Scamorza cheese or any cheese of your choice100g.
*Direction*

*Whisk the eggs with salt and pepper. Add the parmigiano as well.

*In a clean baking pan add the puff pastry.

*Cut the spinach and mix together with the eggs.

*Pure the egg mixture to the puff pastry and bake for 25 - 30 minutes. Or until is cooked.

*Cut and serve together with other appetiser.

*You can make any food of your choice for second. this are just an idea for your holiday lunch or dinner.*

*You can have any cake of your choice or ice cream, But cake is the best idea for this holiday.

[ CHEESE POTATOES CASSEROLE].



*Recipe* For 4 potion.*

*1kg potatoes
*600g tomatoes sauce
*salt
*300g mozzarella
*150g parmigiano
*3 leafs of basil
*2 cloves of garlic
*3 tablespoon of olive oil
50g fresh tomatoes.

[Direction]


*Clean the garlic.
*Place a saucepan on the heat.
*Add the oil.
*Let the oil heat, add the garlic.
*Cook the garlic for 2 minutes.
*Add the tomatoes sauce, salt and basil.
*Cover to cook for 10 minutes in a medium heat.


*While the sauce is cooking.
*Wash the potatoes with the back on. After washing them, Slice them in a round tiny shape with the back on.

*Cut the mozzarella, tomatoes.
divide all them into 3 both the potatoes, and the sauce.

*On a clean casserole. Add 3 tablespoon of tomatoes sauce, follow by the slice potatoes , mozzarella and the parmigiano.

*Repeat the same for the other ones until the potatoes are all in the casserole. (This is the same method of lasagna)


*Place the fresh tomatoes on top and bake in a preheated oven for 45 minutes or until the potatoes are well cooked.


*Serve hot or cold.

[SPAGHETTI CON GAMBERI] [ SPAGHETTI WITH SHRIMPS].



*[Recipe] For 4 portions.*

*1 and half kg shrimps
*150g fresh tomatoes
*1 tablespoon parsley
*1 teaspoon basil
*Half teaspoon dry  red pepper
*2 cloves of garlic
*salt
*Half glass of water
*3 tablespoon olive oil
*Spaghetti.


*[Direction]*


*Separate the shrimps from the shell .Clean both very well separately.

*In a little sauce pan add the cleaned shell and the half glass of water, add a bit of salt and a teaspoon of parsley.. Cover to cook for 6 minutes.

*While is cooking place water on the heat for spaghetti.

*Chop the fresh tomatoes in cubes.
Clean the garlic.

*In a medium saucepan add the pepper, parsley, oil and garlic. Cook the garlic until is golden brown. Remove the garlic from the oil.

*Add the tomatoes and salt, stir for 1 minutes and cover to steam for 3 to 4 minutes.
After 4  minutes add the water from the cook shell. Allow to cook for 4 minutes or until tomatoes is  cooked.

*Cook the spaghetti in a salted boiling water .

*After 4 minutes mix together the cooked spaghetti and the sauce. Add one cooking spoon of water from the one spaghetti is cooked on.

*Stir in the chopped basil and a half teaspoon of parsley, Stir them together for 2 minutes.

* Serve hot with a little bit of olive oil (EVO) Optional.

BAKED POTATOES. GATEAU DI PATATE.

BAKED POTATOES. POTATOES PIZZA.




Recipe.:: for 4 potions.

*500g potatoes
*100g mozzarella
*50g parmigiano
*50g salame
*50gcooked ham
*salt and pepper
*1 tablespoon bread crumbs
*2 eggs
*2 tablespoon of olive oil.

*Direction*


*Peel and cook the potatoes until they are cooked.

*Mash the potatoes with a potatoes masher.

*Cut the mozzarella, salame, cooked ham in cubes.

*whisk the eggs with salt, pepper and 1 tablespoon of parmigiano.

*Add all the ingredients to the mashed potatoes. Mix them all together in a bowl.

*Add 1 tablespoon of olive oil to a casserole, followed by the bread crumbs.

*Then add the mixture to the casserole. Smooth them with your hand or with a back of tablespoon.

*Add the remaining parmigiano on top of it.

*Then  last 1 tablespoon of olive oil. Bake at pre heated oven at 180dg for 30-35 minutes.



*Serve hot or worm**

BAKED PLANTAIN

BAKED PLANTAIN.





Recipe:::


*2 yellow plantain
*2 green plantain
*2 eggs
*1 teaspoon baking powder (optional)
*salt
*Red bell pepper
*3 tablespoon vegetable oil
*crayfish (optional)
*meat(optional)
*1 medium onion
*Half cup of water.

*Direction*

* Clean and blend the plantain  or you can use a greater.
* Clean the red bell pepper and onion. Blend them together with a little water.

*Add the blended pepper to the plantain.

*If you are using meat, steam the meat and set aside.

*Whisk the eggs with salt and add them to the plantain.
(You can add curry to it if you wish. Is optional )

*Mix them with the vegetable oil and water until they are well combined.

*Grease the cake pan with oil. Add the plantain mixture to the cake pan, add the meat if you are using! (Garnish with yellow bell pepper and onion. But these are optional as well). You can bake them without the garnishing.

*Cover it with an aluminum sheet for the first 15 minutes, then un cover it and bake for another 20 minutes. Or until they are well cooked. Bake on a pre heated oven at 180dg.





PLANTAIN CHIPS.




Recipe::

-3-4 green plantain
-1 teaspoon salt
-Cold water
-Vegetable oil.


Direction:::

*Peel the plantain. And cut them very tiny.

*Add the water to a bowl.

*Add salt to the water.

*Add the cut plantain to the salted water and let them seat for 5 minutes.

*Add the oil on a frying pan. Heat the oil. While the oil is heating remove the plantain from the water.

*Pick the cut plantain one -one, dont let the plantain join together in the oil. Fry in a medium heat until golden brown.

*Then remove from the oil.

*Note*

*If you want to preserve it for days. Place the fried plantain in a plastic bag or plates with cover immediately after frying them. This process helps to keep them fresh.*

GARGANELLI CON BROCCOLI E CALAMARI./ PASTA BROCCOLI AND CALAMARI .





Recipe:::: For 6 Portion.

*Pasta (Garganelli) 480g
*broccoli 500g
*calamari (Squid fish) 600g
*dry tomatoes 200g
*olive oil(EVO) 80ml
*dry white wine 1 cup
*shallot 1
*salt and pepper optional.


Direction::::

*Clean the broccoli. Cut in pieces and leave to rest in the refrigerator, covered with a dame cloth (towel).

*Chop the shallot.

*Clean and wash the calamari fish. Cut in chunks. Put them in a hot frying pan with a the oil , Fry for 5 minutes over a medium high heat. Pour in the wine; star and leave to evaporate.

*Add the chopped dry tomatoes and the chopped shallot.
Let them cook on a low  heat for 10 minutes. covered .

*Bring out the broccoli from the fridge, cook it together with the pasta in a boiling salted water. For about 5-8 minutes or until the pasta is cooked. Remove the water from the pasta broccoli and mix together with the sauce.( salt and pepper is optional).

*SERVE HOT.

RISOTTO CON ZUCCA. / PUMPKIN RISOTTO.




Recipe:: FOR 5 PORTION.


-320g of carnaroli  rice.( Rice for risotto)
-600g of pumpkin
-1 medium onion
-1.5L vegetable broth
-black pepper
-salt
-80g parmigiano
-60g white wine
-50g butter
-20g olive oil.


Direction:::

* Peel the pumpkin and cut in cubes.

* Chop the onion. Add the oil in a sauce pan. Allow the oil to heat up a little. Add the chopped onion and cook for 3-4 minutes or until the onion is fully cooked.


*Add the pumpkin to the onion. Cook for 4 minutes continuously stirring. After 4 minutes add 1 cooking spoon of vegetable broth. Continue stirring in a medium heat. When the water is about drying add another 1 cooking spoon to it. Continue stirring and adding the vegetable broth until the pumpkin is very soft. Remove from the heat.

*Add the rice in another sauce pan, place it on the heat. Stir the rice for 3-4 minutes without water or oil.

*After 4 minutes; Add the white wine to it. Let the wine evaporate. After it has fully evaporated add the cooked pumpkin and onion to the rice, cook them together  for 2 minutes, Continue adding the vegetable broth and stir continuously until the rice come to the right consistency. While the rice is cooking add the salt and pepper to it.

*Add the butter and parmigiano to the rice when the rice is fully cook. Allow the butter to melt.

Ready !!!!


Serve hot.

CHICKEN, BROCCOLI,AND ONION SAUCE.


Recipe::

-100g of chicken breast
-100g of broccoli
-1 leaf of sage
-1 dl white wine
-2 tablespoon of extra virgin olive oil
-1 clove of garlic
-salt
-pepper.


PREPARATION:::


-Cut the chicken in cubes. Add the oil in a sauce pan and heat.

-Drop in the clean clove of garlic and cook until the aroma starts coming out. Or until golden brown.

-Remove the garlic from the oil and add the chicken, cook the chicken for 5 minutes.

-Add the white wine, salt and pepper to taste. Add also the sage.

-Cook until wine is fully evaporated.  Then remove from the heat.

-Cook broccoli in a  salted boiling water for 5 minutes, or when is fully cooked. Then remove from the water.  set aside.



-THE SAUCE:: 
-2dl fresh milk
-half yellow onion( chopped)
-1 pack of saffron
-1 tablespoon of corn starch
-olive oil
-salt
-pepper.


PREPARATION::::

-Heat the oil and add the chopped onion and stir . Cook the onion for 3 minutes then add 1teablespoon of water. continue stirring and adding water to the onion until the onion is cooked for 20 minutes in a low heat.( 1 tablespoon of water at a time until 20 minutes.)

-After 20 minutes remove the onion from the heat and allow it to cool down for 4-5 minutes.

-Add the cooked onion into blender, Mix the corn starch and 1 tablespoon of milk together. pour them into the blender with the cooked onion. Blend them together, then add the remaining milk to the sauce pan. 

-Mix in the blended ingredients and cook for 5 to 6 minutes.
Remove from the heat and Serve hot along with the chicken and cooked broccoli. 





POTATOE EGG OMLET. FRITATA (ITALIAN RECIPE)



Recipe::: for 2 portion.

-2 eggs
-30g of parmigiano
-salt
-2 medium potatoes
-1 small onion
-1 tablespoon of olive oil.


PREPARATION:

- Peel the potatoes a.nd cut in a round shape.

-Clean onion, and chop.

-Whisk the eggs with salt and parmigiano.


-Place a frying pan on the heat, add the oil, let the oil heat a little.
-Add the chopped onion. Let the onion cook for 2 minutes.

-Add the potatoes.

-Let them  cook for 4 minutes. Both side.

-Add the eggs.


-Cook both side for 4 minutes.

-

Or until both side are golden brown.

Serve hot.


JELLOF RICE...


Recipe:.

-1 Cup of rice
- 200g of fresh tomatoes
-tomatoes paste
-2 medium onions
-2 bay leaf
-1 teaspoon of thyme
-1 teaspoon of curry
-rosemary
-2 cloves of garlic
-1 teaspoon of ginger
-chicken or beef cubes
-salt
-1 small fresh pepper
-3-4 tablespoon of vegetable oil
- Beef or Chicken 1kg.


PREPARATION::


-Blend the fresh tomatoes with 1 onion, ginger, garlic, and pepper together.

-Pour the blended tomatoes on a sieve, let it seat for 10-20 minutes.

-Place a sauce pan on a heat, add the oil, let the oil heat a little then add the onion (chopped).

-Cook the onions until golden brown.

-Add the tomatoes paste, cubes, thyme, curry, rosemary, bay leaf and salt.

-Let them cook for 5 minutes then add blended fresh tomatoes mixture, mix and let them cook for 10 -15 minutes.

-Parboil your rice. Stem the chicken or beef (or both) with salt, water, onion, rosemary, thyme, curry and cubes.

-Cook until the meat is well cooked.
Then fry or bake (optional)

-Parboil rice, mix it with the tomatoes sauce, add the stock ( water that came out of the meat, chicken).

-Taste for salt. Cook until the rice is well cooked on a medium heat.

-Serve hot or cold.



SIMPLE SPAGHTTI SAUCE. SAPAGHTTI CON POMODORO AL FORNO.



Recipe:: For 2 person
-spaghetti for 2 portion
-150g of cherry tomatoes
-2 cloves of garlic
-pinch of oregano (optional)
-2 tablespoon of olive oil


PREPARATION::

-Cut the tomatoes in 2.
-Place them on a casserole.
-Add the oil, salt and garlic. (optional oregano)
-Bake in a pre-heated oven for 1 hour 30 minutes on 150dg.
-Remove from the oven.

-Cook spaghetti in a salted boiling water.
-When the spaghetti is cooked. Mix it together with the baked tomatoes.
-Ready. Serve Hot.
Enjoy.

BAKED PASTA. PASTA AL FORNO.


Recipe::
 Pasta for 6 person
700g of tomatoes sauce (x2) passata di pomodoro
100g of fresh cherry tomatoes
salt
basil
2-3 cloves of garlic
500g of mozzarella
150g of parmigiano (grande)
1 tablespoon of oregano.




PREPARETION.

-For the sauce; 
- Clean the garlic. Place a sauce pan on the heat. Add the oil and garlic. Cook the garlic until the aroma saturates.

-Add the tomatoes sauce,( passate di pomodoro), salt, and basil. Cover to cook for 10 minutes.

-While the sauce is cooking, place a water on the heat. Bring the water to boil. Add a little salt on the water pour the pasta on the boiling water .

- Cook the pasta half minutes of the original cook time. Then remove the pasta from the water.

-Divide the sauce in 3 . Mix the pasta together with one of the potion of the sauce. From the other 2, add a little on a casserole .


Divide the pasta also in 3 portions add the first one after adding the sauce, follow by mozzarella ( cut the mozzarella in cubes) and parmigiano. Repeat the same (x3) with the remaining pasta, mozzarella and parmigiano, then tomatoes sauce on top of each .( just like lasagna).

-Slice the cherry tomatoes in two. Place them on top of the pasta. Sprinkle the oregano too.

-Add a half cup of water on it and bake in a pre- heated oven for 45 minutes at 180dg.

Remove from the oven. Ready!!!!

 



POLPETTE DI MELANZANE.( EGGPLANT BALL) ITALIAN RECIPT.





Recipe:: For 4 person.

-1 Big Eggplant
-2 egg
-50g of parmigiano
-salt
-3 leaf of basil (optional)
-1 clove of garlic
-100-150 bread crumbs
-vegetable oil for frying.



/For the Tomatoes Sauce::|


-700g Tomatoes Sauce
-salt
-2 leafs of basil
-2 cloves of garlic
-3 tablespoon of olive oil.


PREPARATION::


 -  Place water on the heat. Cover it to boil.

-While the water is on the heat, clean the eggplant, wash and peel the back.
-Then cut them in cubes.

-Add a little salt on the boiling water, then add the eggplant. Cover to cook until they are cooked. It takes about 15 minutes to be cooked.

Then remove them from the water. Pour them on a sieve. Press them with a back of a cooking spoon to Remove the excess water. (You can do this over night to let the eggplant dry very well or you can use them immediately) I use both methods depending on my time.

- When the water is fully out the eggplant , transfer the eggplant to a bowl. Whisk the eggs with parmigiano, salt and garlic together. Pour them over the eggplant.

- Add bread crumbs ( don't let it to be too dry or too soft) Mix them together with your hand. When the mixture is in a normal consistency not dry or soft. Roll them just like the way you roll meat balls. In a small piece. Bake or fry or bake them until they are golden brown just like in the photo.



FOR THE SAUCE.

-Place a sauce pan on the heat, add the oil and garlic. Let the garlic cook until the aroma is out.


-Then add the tomatoes, salt and basil, cover to cook in a low heat for 10 minutes. Then;

-Add the fried or baked eggplants stir and cover to cook in a low heat for another 15 minutes.
  READY!!!!

BAKED POTETOES AND HAM. ITALIA DISH.



Recipe:: For 6 person.

-1 kg of potatoes
-300g of sliced Ham
-Scamorza cheese 400g
-Parmigiano 100g
-Besciamella 400-500 ml.



*Besciamella Recipe*
*1L fresh milk
*80g flour
*pinch of nut meg
*salt
*black pepper
*100g butter.



Preparation::

-Place a water over the heat. Bring the water to boil.
-peel the potatoes, and then add to the boiling water.
-Cook them for to -15 minutes.
-Remove them from the cooked water.
Let them cool down for 10 minutes or completely cold.


-Slice the potatoes in a round shape not too thick.
-Cut the Scamorza cheese in cubes and set aside.
-Divide the potatoes in 3.


-In a casserole add 3 tablespoon of besciamella, followed by the sliced potatoes, Scamorza, Parmigiano and the ham then besciamella.

-Repeat he same until the potatoes are all in the casserole.

-The last should be the cheese. (you can add a bit of water on it before putting them in the oven. optional).

Bake in a pre heated oven for 40-45 minutes on 180c.

Serve hot or cold.


HOME MADE BESCIAMELLA.

-Place a sauce pan on the heat.
-Add the butter let it melt. Then add the flour cook them together for 5 minutes in a low heat. Continue stirring until the flour is cooked.
-Then pour in the fresh milk, use a whisk to stir them. Add the salt, pepper and nut meg to it.
-Stir them continually in a low heat until the consistency become slightly thick. Remove from the heat.
Ready to be used.







SAUSAGE, CAPRI,AND TOMATOES.




Recipe:: For 3 person.

- 8 small Sausage
-2 tablespoon of olive oil
-salt
-capri 1 teaspoon
-pepper
-half can of plum tomatoes.

Preparation.

-cut the sausage open just like in the photo.
-In a sauce pan add the oil, let the oil heat a little.
-Then add the capri, tomatoes and sausage. Stir them.
-Add the salt and pepper. Then cover them to cook for 10 minutes in a low heat or until the sausage is fully cooked.

Preparation and cooking time 15 minutes.

FISH, CAPRI,TOMAOTES.



 Recipe::

. 2 tablespoon of olive oil
.1 teaspoon of capri
.3-5 fresh tomatoes
.4 frozen or fresh filet or cube fish.
.1/4 cup of dry white wine
.salt and pepper.
. 2 cloves of garlic.


  Preparation::
 
- Defrost the fish if you are using frozen one.

- Heat the oil on a sauce pan, add the garlic and cook until the aroma starts coming out. Remove the garlic from the oil.

-Add the fresh tomatoes( cut the tomatoes inti 2).
-Add the fish, capri, a bit of salt, wine. Stir and put the lid on. Cook for 10 minutes in a low heat. Or until the fish is well cooked.

 Serve Hot.

 TOTAL TIME OF COOKING 30 MINUTES.

[VEGAN ITALIAN RECIPE]   ARTICHOKES, PEAS, AND PASTA. [ PASTA, CARCIOFI E PISELLI]


Recipe: For 3 person.
.150g of clean Artichokes
. 100g 0f peas
.3 Tablespoon of olive oil
.1 Cup of water
.1 medium onion
.Cube pasta or Rice 3 person portion
.salt
.pepper.


  [ Preparation:::]

-Chop onion the onion.

-Add the oil in a sauce pan and heat.

-Add the chopped onion to the oil, and cook for 3 minutes.

-After 3 minutes add the cleaned artichokes, stir them for 4 minutes.

-Then add the peas ( fresh or frozen peas).Add the salt, pepper. Cook them for 5 minutes.

-Then add the water. Put the lid on it.

Let them cook for 30-45 minutes in a low heat. While is almost cooked.
-Cook the pasta in a salted boiling water depending on the cooking time on the pasta you are using. (You can use white  rice as well.)

-When the pasta is cooked, mix together and serve hot.

YOU CAN HAVE IT WITH COOKED WHITE RICE AS WELL.

EGGPANT CHEESSE COOKED IN THE OVEN. [PARMIGIANA DI MELANZANE]



[Recipe For 3 Person]


.1 medium Eggplant
.2 cloves of garlic
.Salt
.Tomatoes sauce( pizza sauce) 700g
.2-3 leafs of basil
.375g of fresh mozzarella
.150g of parmigiano
.2-3 eggs
.250g of flower
.vegetable oil for frying.



[ Recipe/ Direction/ Method]

-Clean and peel the eggplant.
-Cut in a stealth ways.
-Add the flower on a plain pan.

-Beat the eggs.

-Pass the cut eggplant on the flower, make sure they are well covered with flower.

-Then repeat the same with egg(from the flower to the beaten eggs).

-Heat the vegetable oil, let it heat up.
-Then fry  both side of the  eggplants. repeat the same with the other eggplants.
-While you are frying the eggplants, Place another sauce pan on the heat, add the olive oil to it follow by garlic. Let the garlic cook until the aroma comes out.


-Add the tomatoes and a bit of salt. Let them cook in a low heat for 10 minutes.

-Cut the mozzarella in cubes.

-preheat the oven on a 180dg.

-On a clean Casserole, add 1 cooking spoon of the tomatoes sauce, make a layer of the fried eggplant add tomatoes sauce, mozzarella, parmigiano.( just like lasagna process) repeat the same thing in all.
The last should be tomatoes sauce . Then add the leaf of basil and bake for 45 minutes at 180dg or until is well cooked.

  THIS IS AN ITALIAN RECIPE FROM SOUTH ITALY. IS CALLED (PARMIGANA DI MELANZANE)

  It takes about 1 hour or less to make this.!!!!!

 Is very easy to prepare.
