Vegetable Nuggents.

*Recipe*

* 1 medium eggplant
*1 big carrot
*1 zucchini
*1 big  potatoes
*nut meg
*salt
*teaspoon marjoram
* 2 eggs (not for vegan)
*50g parmigiano or vegan cheese
*Bread crumbs
*oil for frying or you can bake them.

*Direction*

* Wash and slice the eggplant. Place the slice eggplant over a baking tray, add oil and salt and bake them for 10 minutes.

*Boil the cubed potatoes for 10 minutes and mash with a potatoes masher or with a folk.

*Stem the cubed, carrot, zucchine over a double boiler until they are tender.

*Cube the eggplant when is out of the oven .

*Combine all the vegetables together.

*Whisk the eggs with nut meg, salt, parmigiano and marjoram.

* Pure the egg mixture over the vegetables. Add  4-5 tablespoon of  bread crumbs and continue mixing until they are well combine.

*Roll them in a round shape.

* Roll them over bread crumbs or flour.

Fry on a hot oil or bake them.

*Enjoy with any hot sauce of your choice or cream.
