This frittata is one of our favourite right now. They are very delicious and is baked and not fried.
We love it and hope you too will love as the taste is super over the moon, hehehe.
Serving: For 6-7 Persons*
*Recipe*
*10 eggs
*1 onion
* 1 cup of fresh milk
*3 zucchini
*100g parmigiano
*2 tablespoon of flour
*pinch of nug meg
* 10 - 15 leafs of fresh spinach
*salt and pepper
* 2 - 3 tablespoon of olive oil.
Preparation*
*The good thing about this is that they can stay over night in the fridge and still be very delicious.
* Clean the zucchine and slice them in a round shape; Chop the onion.
* In a sauce pan over the heat. Add the oil and chopped onion. Bring the onion to brown.
* Add the sliced zucchine to the onion. Add salt and pepper and continue cooking until the zucchine are a bit tender.
* Whisk the eggs, flour, milk, parmigiano, salt pepper and nut meg in a bowl.
*Remove the zucchine and onion from the heat and add them to the egg mixture.
* Stir them together. On a casserole or baking tray. Lay a baking paper over it
and pure the zucchine and egg mixture
. Add the fresh cleaned spinach on top.
* Bake on a pre heated over for 30 minutes at 180dg .
