*This recipe is originally from south Italy. Is one of my favorite Italian dish that i can never say no to. So lets get to the recipe.
*Recipe*
*300g rice
*1 and half kg of mussels
*100g parmigiano
*200-250g potatoes
*3-4 tablespoon of olive oil EVO
*salt
*1 onion chop
* Parsley
*Few fresh cherry tomatoes.
* Preparation*
* Peel and slice the potatoes in a round shape and set aside.
* Clean the mussels.
* On a casserole, add part of the sliced potatoes, follow by salt, a bit of the chopped onion, parsley, mussels, rice then parmigiano.
*After this. Start the layer again with the remaining sliced potatoes, salt ,onion, parsley and parmigiano. On this part you don't need to add rice again.
*Then the olive oil and water. 1 and half cups of water. Let the water be at the same level with the potatoes.
*Cook them on a pre-heated oven for 1-30 minutes to 2 hours or until the rice is well cooked at 180dg.
*If you are the type that don't like fish you can use zucchine in place of mussels or any kind of vegetables you want. I believe that kitchen is an art. It gives you the opportunity to create your meal dish which ever way you want.
*This recipe is for 2 casserole.

*This dish can last in the fridge for only 2 days.
