Crostata Salata Agli Asparagi/ Asparagus Tart.

*Is a season of asparagus so here is what i come up with. Hope you like it.

*Recipe*

*puff pastry already prepared or any pastry of your choice
* 4 eggs
*250 asparagus
*1 leek
*2 tablespoon of dry white wine
*2,5 dl milk
*parmigiano 80g
*fresh or dry thyme
*teaspoon of nut meg
*30g of butter
*salt
*pepper.

*Preparation*

* Clean the asparagus. Place a water over the heat with a bit of salt. Add the cleaned asparagus and let them cook for 6-8 minutes.

*Remove the asparagus from the heat and place over a fresh water.

*Whisk the eggs, milk,, parmigiano, nut meg, salt and pepper together.

* On a fry pan place on the heat. Add the butter and the chopped leek. Allow the leek to cook for 2-3 minutes. Add the wine stir and allow the leek to cook until tender on a low heat.

*Place the puff pastry on a casserole with an oven paper.
Make an opening on the puff pastry with a folk. Pure the egg milk mixture over the puff pastry.

* Add the cooked leek then the cooked asparagus and thyme.

* Bake on a pre heated oven at 180dg for 40 minutes or until cooked.

*Serve hot.

This tart can last up to 3 days in the fridge.
