SeaFood Jellof Rice #NigeriaFood

* Yes Nigeria Jellof Rice is the best....lol 

Have you heard of  the mouth watering, super yummy taste of the Nigeria jellof rice? If NO; then I have but to say, you are really missing. You sure need to try it. Recipe below to give yourself a try of the amazing Nigerian Jellof Rice⇩
 Serving: For 4 -6 person*

*Recipe*

*200g of per boil rice
*150g tomatoes paste
*4 fresh tomatoes
*2-3 maggi cubes
*salt
*2 onion
*2 cloves of garlic
*ginger optional
*pepper
*vegetable oil
*Thyme , rosemary, curry and bay leaf.

  For Seafood*

*Half kg shrimps
*300g calamari
*1 tablespoon fresh parsley
*1 teaspoon fresh basil
*1/4 dry white wine.

Preparation*

*Clean the seafood and sent aside.

* Par boil the rice.

*Clean/ wash the tomatoes and blend with 1 onion, garlic, ginger, and pepper.

* On a sauce pan. Add the oil, and the other 1 onion( chopped). Bring the onion to brown.

* Add the tomatoes paste. Stir and add the thyme, rosemary, curry, bay leaf, cubes and salt.

* Stir and allow them to cook for 4 minutes. Add the blended  tomatoes to the tomatoes paste sauce. Stir them and allow to cook until the tomatoes are dry.


*Divide the tomatoes sauce into 2.

* Add one part of the sauce to the par-boiled rice. Stir, add water just a little over the rice. Cover to cook until the rice is cooked. You can add more salt to the rice if needed.

  For The Seafood*

*Over the heat place the 2nd part of the sauce. Add the cleaned seafood. Stir and add parsley, basil and the white wine. Allow the wine to evaporate. Then remove from the heat.


* Mix the cooked rice and the seafood together. Cover and allow them to stay over a low  heat for 3 minutes.


Serve hot or cold.
* The parsley and basil added a very wonderful flavour to it.

The parsley, basil and wine was added by me. Normally Nigeria's don't add them. But believe me seafood is best with them if you are preparing the jellof rice with seafood. You can try it and let me know what you think about them. xxx

*Storage*

   For me i don't like to store seafood meal. I always prepare the one that can be consumed the same day.
