Black Eye Beans And Plantain.

 *Beans and Plantain is one of Nigeria favorite dish. Hope you love it as much as Nigerian's love it.

*Recipe*

* 200g black eyes beans
*4 yellow  plantain
*fresh or dry peeper
*salt
*1 maggi cube
*1 onion
*2 fresh tomatoes
*4-5 tablespoon red palm oil
*2 tablespoon crayfish .

*Preparation

* Wash the beans with a clean water. I normally do this 3 times then allow then to cook on a boiled water for 10 minutes, then wash again. Washing them with hot water allows you to get rid of the chemical they use in preserving them.

* So after washing them. Add another hot or cold water that will be enough to cook them and place over the heat. Allow them to cook until they are salt.

*While the beans are cooking.
*Chop the plantains in cube or in a round shape. Chope the onion.
*Slice the tomatoes. Blend the crayfish with pepper and sent them aside.

* Add salt, chopped onion, plantain to the beans.

*Stir and add the red oil and tomatoes. You can skip the red oil and replace  it with fresh  paprika.

*Add the blended crayfish with pepper and maggi stir all together. Add a little more water if the one used in cooking them is dry.

*Cover and allow them to cook for another 10-15 minutes depending on how much soft is the beans . If the beans are not soft as desires allow them to cook for more time with more water. But i love to, allow the  beans to cook and  become soft before adding the ingredients.

You can as well add other ingredients like meat or fish etc. 

  * It takes about  1hour 30 minutes both cooking and preparation .
  * It can be store in the refrigerator for days. And can be frozen for months.


We all know that beans are one of the heathiest food ever. It contains iron, protein etc. Is good for Adult and children.
