Zucchini Shrimps Risotto.
     Recipes::
      
    -1medium zucchine
    -2 cups of risotto rice (Arborio)
    -150g of shrimps
    -black pepper
    -salt
    -3 tablespoon of olive oil(EVO)
    -half cup of dry white wine
    -1 medium onion
    -2 cups of vegetable broth/ or enough to cook the rice.( you can make your own vegetable broth at home or buy from the store).
   

Method:
pour the olive oil in a sauce pan, let it heat a little, chop the onion and cook in the oil until golden brown. Add the rice and stir for 5-10 minutes. Add the wine and continue to stair until the wine evaporates completely. Add 1 cooking spoon of the vegetable broth, continue stirring and add salt and pepper to taste. Add the chopped Zucchine, continue to add the vegetable broth. Add the cleaned Shrimps when the rice is almost cooked.  Continue to add the vegetable broth until the rice is cooked and tender.
Enjoy your vegetable risotto! It's very light because there is cream or cheese on inside.


Homemade Vegetable Broth:
-1 onion
-salt
-1 stick of celery
-1 zucchine
-1 carrot
-2 small tomatoes (optional)
-water for cooking.

Method:
Clean and cut zucchine in cubs.
Clean and chop onion, carrot, celery,  and tomatoes, add all together with water, olive oil(EVO)and salt. cook on a low heat for 1 hour- 2 hours. I advise you to make the vegetable ahead of time.
